One Fish, Two Fish: Fish Cookery

Course Overview

Set aside the breading and take your fish cookery to the next level. Join New Scenic Cafe owner/chef Scott Graden in all things aquatic starting with the butchering/preparation of half a dozen Denizens of the Deep. Dishes will include beet-cured salmon and several controversial Scandinavian classics: lutefisk and pickled herring. The course will also deliver delicious fish cakes and seafood sausage. There are even rumors of whole salt-crusted snapper. Pescatarians need only sign-up and dive into a new appreciation of the art of cooking fish.

On the evening before the class, Scott will give a public presentation at 7pm; students are highly encouraged to attend. On Day 2, the class will culminate in a shared meal at 4pm

You will need the following tools for this class:

All required tools/materials are provided by your instructor and North House and will be available once the course begins.

On the second day, we will share a communal meal, beginning around 4pm, typically ending by 6pm.  Please feel free to bring a beverage of choice to enjoy with dinner (adult beverages are okay). You are welcome to bring a guest.

Optional Tools

Feel free to bring your favorite tools and whatever materials you might feel appropriate for this course.
