Scandinavian Summer Classics

Course Overview

Celebrate the peak of the warmest season with Scandinavian favorites. Join chef Scott Graden, owner of the New Scenic Café, to explore the fresh flavors of Midsommar. Fish and seafood take center stage in these summertime dishes, including skagenröra, crayfish boil, herring, and smoked salmon. Students will also enjoy prinskorv, a small, but stately crown-cut sausage. Toast the ever-lingering daylight with a hearty “skål!” and enjoy refreshing beer and aquavit accompanying the classic Scandinavian fare. On day two, the class will culminate with a shared meal at around 4pm. Students may bring a guest to the meal.

Required Tools
